DANGEROUS CHOCOLATE CAKE IN A MUG
Aren’t computers wonderful? If I didn’t have one, I never would have received an email from my friend telling me about this dangerous chocolate cake-in-a-mug. I tried it right away and was so pleased, I called my son on my cell phone (we have a Verizon plan where minutes are free if one Verizon phone calls another). He told me to be careful when I told him about the danger with this recipe. The danger is that chocoholics will always be less than 10 minutes away from the taste of chocolate. To be away from chocolate any longer is really living on the edge. The problem is, the recipe came in an email and my cookbook and recipe card file are overfull. Trying to find a recipe takes longer than it takes to bake a cake-in-a-mug. Hmmmm.... maybe if I had a laptop computer, I could create a file with all my favorite recipes, keep it in the kitchen, pull up the chocolate-cake-in-a-mug recipe, and read it off the screen as I make the cake. Then I could pack my cookbooks and card file away, giving me more storage space in my kitchen. I’ll have to think about this some more. While I’m thinking, I’m going to pour myself a cup of cinnamon tea and dig into my mug of chocolate cake. Life is good!
INGREDIENTS:
1 coffee micro-wavable mug. The mug I wanted to use was too small, so I used a small micro-wavable bowl.
4 Tbsp. cake flour (plain, not self-rising)
4 Tbsp. sugar
2 Tbsp. cocoa
1 egg
3 Tbsp. milk
3 Tbsp. oil
Small splash of vanilla
3 Tbsp. chocolate chips, optional. I like to sprinkle the chips on top of the cake after it has finished baking. They soften and you can spread them with a knife or spoon for a delicious frosting. Mint Chocolate chips are even tastier!
METHOD:
1. Add dry ingredients to mug, mix well with a fork.
2. Add egg, mix thoroughly.
3. Pour in milk and oil and vanilla, mix well.
Add chips, if using.
4. Put mug in microwave, and cook for three minutes on 1000 watts.
Cake will rise over top of mug--do not be alarmed!
5. Allow to cool a little; tip onto a plate if desired.
Just think! This recipe puts chocolate lovers less than ten minutes away from chocolate cake any time of the day or night! The batter does rise up ’way over the top of the mug, but doesn’t run down the side. Fun to watch! Be careful not to overcook, as the cake could dry out -- three minutes might be too long if your microwave is more than 1000 watts.
